		<description>I worked at an apple orchard and we made caramel apples all the time.  They can be made 2 -3 day ahead of time.  There is no reason to soak them in lemon juice they will not turn brown as the only hole in them is a small one for the stick which will be covered with the caramel.  They should not be refrigerated it will mess up the consistency of the caramel.  They should be kept tightly covered in a cool place. 		<description>if you soak you apples in ice and lemon juice first (only about 30min) to keep them from browning you can definitely make them 1-2days in advanced.... even a few days more that than.  But you should put the apples in the fridge but make sure they&#039;re in a Tupperware or glass dish, basically just keep them in a container so they don&#039;t soak up the rest of the smells in the fridge and then you have refrigerated tasking candy apples.
